The challenge when making something as simple as nut brittle is to ensure a perfect balance of the sum of the parts. First the ingredients themselves; here butter, sugar, vanilla and salt and nuts all needed to come together in perfect harmony. But all of that is for nothing if you don’t have the right texture; a satisfying snap and crunch that’s not too hard. For us, that’s a mix of whole and broken peanuts.
